Egg-splosion!


The chickens (8 hens) have been laying eggs like crazy so when I opened the fridge Saturday morning I had almost 4 dozen eggs staring back at me. I needed to put the family on an egg eating regimen immediately. I started by hard boiling 15 eggs, they will be used for lunches, snacks, and deviled eggs.


Saturday morning breakfast was Quesadillas of two types. The first was salsa, feta and mozzarella cheese, and black olives. The second group was pico de gallo, sharp cheddar cheese, and black olives. The result was happy faces and 9 more eggs eaten.


I still had salsa and Pico left over so I decided to make a few quiches for freezing. One with salsa, sausage, sour cream and cheese, the second with the Pico, sausage, sour cream and cheese. This used up 6 more eggs.


Sunday morning we had pancakes and eggs, 6 eggs down for a total of 36 this weekend - whew!

  2. Ooo YUM! You made me hungry, thanks lol. For the Quesadillas, did you just use the eggs, cheese, salsa and black olives for the entire thing? Gosh I want one!!! Sounds amazing!!! Also, mind sharing the recipe for your Quiche with the sausage?? I've never actually made one before and I'm dying to try one!

  3. Ours have been laying bunches too...we usually end up making quiches. Last Easter, besides the deviled eggs, we ended up making and giving away a quiche to everyone who came over for dinner...it was NUTS!
    I love fresh eggs!!

  4. Niece - The 8 hens get pasta at lunch every day (got the idea from Razzberry Farm), plus they are young.

    Mandy - I will have to make a quiche post after we try them, The sour cream was new (idea from Big Oaks Farm).

    Stacy - Maybe frozen quiches will become the new Christmas fruit cakes! I too love the fresh eggs.

  6. Farmgirl - I am amazed at their production especially since they get so little sunlight (in the coop). I hate to say but the Commander does a lot of the cooking......

  9. That is a lot of eggs to go through in a weekend :) I love the idea of making quiches and putting them in the freezer! We only have 4 hens and we have 3 dozen eggs in the fridge at the moment. Thank you for the motivation! I would love the quiche recipe too.

    Shannon - I have to get the measurements figured out first, I currently use things like; heaping spoon-fulls, 2 old brown spoon-fulls, grind pepper until your hand gets tired, etc. The chickens gave us 6 more today so I have to get "cracking"!
